Produced using the traditional method without any dosage, from a local grape variety planted in rock crevices, in a terroir unique in the world, at the base of a volcanic mountain, in the middle of the ocean and very close to the sea, where you can hear the "crab singing." This proximity, sometimes just a few meters, requires protecting the vineyard from the strong, salty Atlantic winds with man-made stone walls. The result? Exciting!

Tasting notes: Citrusy straw yellow color, with notes of grapefruit, some lime blossom, almost honey. Aroma of the sea. Tense, fresh attack with fine bubbles and plenty of salinity.
