Its natural acidity and low alcohol content allow for great bottle aging potential. When handled correctly, the variety can produce a fantastic wine in a Burgundy-like style. Fifty percent of this wine was aged for five months in new 500-liter French oak barrels. A wine with natural acidity, it's a great choice for duck confit. It also pairs well with mushroom and cheese risotto.
