Once at the winery, the grapes of Domaine Pignier Sauvageon are gently pressed and fermented in "egg" tanks, filled to the brim, for 12 months with indigenous yeasts and no additives. Finally, it is bottled without clarification or filtration on a "flor" day according to the lunar calendar and sealed with a natural cork branded with fire.
