Product Info
One of South Africa's great wines. Vinification and Aging: Hand-selection of individual berries from the entire production into small "strawberry" boxes. Fermentation occurs spontaneously in 3,300-liter open concrete fermenters for three weeks. No additions are made to the fermenting wine. Aged for 12 months on the lees in tight-grained French oak barrels, 5% new. Then, it is transferred to large oval barrels (foudres) for an additional year of aging on the fine lees. After two years, the wine is bottled unfined and unfiltered.
Grape Varieties: Syrah, Grenache, Cinsault, Carignan, Tinta Barocca and Mourvedre
Region: South Africa - Western Cap
Tasting Notes: Demonstrates great complexity; the aromas are not a singular line, but a union of many aspects. The aromas are a combination of fresh, bright red fruits, which then transform into riper black stone fruits. The wine is also very earthy, seeming to live in a bed of freshly plowed earth—and there are also the appearance of much darker graphite aromas.
